VEGAN CAULIFLOWER TACOS
These are the easiest and tastiest vegan tacos you'll ever have! They are so good you won’t even miss meat and they take only 30 minutes to make.
HOW TO MAKE OUR CAULIFLOWER TACOS:
Servings: 10 tacos
1 head of cauliflower
1/2 a head of iceberg lettuce
10 small tortillas
2-3 tbsp olive oil
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp garlic powder
1/8 tsp cayenne pepper
1/4 tsp coriander
1 tsp salt
1/4 tsp pepper
Cilantro lime sauce:
2 ripe avocados
6-8 fresh sprigs of cilantro
1 jalapeño pepper (remove seeds for less spice)
Juice and zest of 1 lime
1/2 tsp salt
2-4 tbsp water (depending how thick you want the sauce)
First we are going pre heat our oven to 425F and then wash and cut our cauliflower into bite size pieces. Next we are going to add it into a large mixing bowl with our olive oil. Toss the cauliflower pieces around and make sure all pieces are coated. Now it's time to make our taco seasoning, we're going to grab a small bowl and add in all our spices (cumin, paprika, garlic powder, cayenne pepper, coriander, salt and pepper) and mix them all together. Once the taco seasoning is all combine, sprinkle it onto your cauliflower bites and mix until all pieces are coated. Now grab a piece of parchment paper and lay it onto a baking sheet and then pour the cauliflower pieces evenly onto the baking sheet. Now we are going to put them in the oven for 25-30 minutes. While the cauliflower is cooking we are going to make our cilantro lime sauce. Grab your blender and add in the avocados, cilantro, lime juice and zest, salt and jalapeño pepper and blend until combined. Last but not least shred the iceberg lettuce and start making the tacos!
We topped our cauliflower tacos off with some homemade pickled onions, cilantro and hot sauce but feel free to and any other toppings you would like.
-If you don't have all the ingredients to make your own seasoning or just want to make this recipe faster you can always use a store taco seasoning.
-If you don't have a blender the cilantro lime sauce still turns out amazing if you hand mix it! Just turns out more of a guacamole than a sauce.
