PUMPKIN BROWNIES

These brownies are the perfect treat to get yourself into the fall season!




Servings: 9 Brownie squares

Total Time: 35 mins


INGREDIENTS:

Flax eggs:

2 tbsp ground flax + 5 tbsp water

Wet:

1/2 cup sugar

2 tbsp maple syrup1/2 cup pumpkin puree

1/2 cup nut butter

1/4 cup coconut oil

1/4 cup plant milk (we used oat)

1 tsp vanilla extract

Dry:

1 1/2 cups oat flour

1 tsp baking powder

1/2 tsp pumpkin pie spice

1/3 cup cacao


INSTRUCTIONS:

First, mix together flax seeds and water to make your flax eggs and let them sit in the fridge for 10-30 minutes. Preheat your oven to 350 degrees. Mix your wet ingredients together and then pour in your dry ingredients, except the cacao. Once the wet and dry ingredients are mixed together, add in your flax eggs and stir until fully combined. Get a second bowl and set aside 1/2 cup of your batter. In the remaining batter add in your cacao and mix together. Pour your chocolate batter into an 8×8 baking dish (make sure it's greased). Swirl the 1/2 cup of batter you put aside on top and bake for 20-25 minutes. Let cool for at least 10-15 minutes. Enjoy!
