If you haven’t tried a cherry iced coffee, now is the time.
This cherry iced coffee is one of our favourite ways to make a drink at home that’s better than you can get at a coffee shop. It’s rich, slightly sweet from the cherry syrup, and balanced with creamy milk and strong espresso poured over ice. You can use any milk you like, but this is my favourite version lately. It feels like a summer coffee moment in a glass.

Cherry syrup
1 cup frozen cherries (or fresh pitted cherries)
1/2 cup sugar
1/2 cup water
Optional squeeze of lemon juice
Instructions
Add cherries, sugar, and water to a small pot
Bring to a gentle simmer over medium heat
Stir and mash the cherries slightly as they soften
Let simmer for 10–15 minutes until thick and syrupy
Remove from heat and strain if you want a smooth syrup
Let cool before using or storing in the fridge
Ingredients (iced coffee)
Cherry syrup
2 shots espresso
1 cup milk of your choice (homemade nut milk is my favourite)
Ice (preferably nugget ice)
Homemade nut milk (optional)
1/2 cup almonds
1/2 cup coconut shreds
3–4 cups water
2–4 dates
Pinch of salt
Blend in a blender then strain or use a nut milk maker

Instructions
Fill your glass with ice
Add cherry syrup (adjust to taste)
Pour in your milk of choice
Slowly pour over the espresso shots
Stir lightly and enjoy
Tips for the perfect cherry iced coffee
Use strong espresso for the best flavour
Pour espresso last for that layered look
Add more cherry syrup depending on how sweet you like it
Use nugget ice (it's the best)
